This is a delicious and very easy chicken dish that is great when paired with couscous, rice or pasta. Be sure to marinate for at least 7 hours. As is, feeds 6 people.
6 - 8 boneless chicken breasts
2-3 tsp capers
1/2 jar green olives
1 can artichoke hearts (packed in water not oil)
1 tsp. oregan
3 bay leaves
2 tbsp. chopped parsley
1/2 cup brown sugar
4 cloves garlic minced
1/2 cup white whine
1/2 cup balsamic vinegar
1/3 cup olive oil
Mix all ingredients together put in baking pan, add chicken and marinate overnight. Bake at 350 for about 45 minutes.
